Key Responsibilities
- Manage the daily operation of the assigned kitchen section, ensuring efficient preparation and timely service.
- Prepare and present high-quality dishes for buffet, plated service and special dining experiences, maintaining consistent standards.
- Ensure compliance with food safety, hygiene, cleanliness and HACCP procedures.
- Monitor stock levels, control portions, minimise food waste and maintain cost-effective kitchen operations.
- Coordinate with the Head Chef and kitchen brigade on menu execution, mise en place and guest dietary requirements.
- Support and guide junior team members while maintaining kitchen discipline, teamwork and operational efficiency.
Requirements
- Recognised culinary qualification or equivalent professional training.
- Minimum of 3 years’ professional kitchen experience, preferably in a hotel, safari lodge or resort.
- Proven ability to manage a kitchen section and deliver quality buffet and plated dishes.
- Good knowledge of food safety, hygiene, stock control, portioning and food-cost management.
- Strong organisational, communication and teamwork skills, with the ability to work independently under pressure.
- Flexible to work shifts, weekends and public holidays, with a professional attitude and passion for culinary excellence.
